Technically how does an Android rooting works?

Every-time you buy a smart-phone, you just don't buy the smart-phone you watch in TV commercials. There is a lot more you can do with your smart phone. Initially the phone manufacturer acts as the superuser of you phone which means, your phone can only perform the tasks permitted by the superuser. The manufacturer only permits your phone to operate as a TV commercial smart-phone, not giving is access to do things like blocking the wifi of other devices on same network, enabling 360 degree rotation, letting you open the boot-loader of you device etc.
Therefore, when you root your phone, you set a new superuser, removing the default one. The new superuser (Ex: SuperSu) gives your device all the permissions to do what ever it can, which is why you area able to going into system software folders, change your boot animation using a zip file, hack apps etc.
You can even flash new ROMs by these permissions. However, when you flas a new ROM, you completely delete the older one (considering there is no backup) and therefore the superuser again changes to the new ROM's default superuser with restricted set of permissions. So, whenevr you flash new ROMs , you have to Root your device again to gain Root access.
A rooted mobile can :
1.Install and hack apps
2.Use malicious apps to hack others
3.Stop advertisements
4.Manipulate internet access to devices connected in a network
and lot of things.
